摘 要：畜产品加工学是以牲畜为对象，研究肉、奶、蛋等加工的科学理论和工艺技术，是一门融合了道德、法律、管理和技术的综合型学科，是食品科学与工程、动物科学等专业的核心课程，是开展课程思政的良好载体。为充分发挥畜产品加工学的育人功效，进一步挖掘并整合教学过程中蕴含的思政元素，该文从提高教师课程思政能力、灵活运用多种教学手段、构建系统化课程体系以及创新课程考核方式等方面进行了改革探索实践，力求将“立德”与“树人”有机结合，培养有理想信念、职业道德的时代新人。

Practice and Exploration of the Ideological and Political Teaching Reform in the Course of Animal Products Processing

Abstract： Animal Product Processing is the study of the scientific theories and technology of processing meat， milk， eggs， etc.， with livestock as the object. It is a comprehensive discipline that integrates ethics， law， management， and technology， which is a core course for food science and engineering， animal science， etc. It is a good carrier for ideological and political education. In order to give full play to the education effect of animal product processing， this article thoroughly explored and sorted out the ideological and political elements contained in the curriculum. The ideological and political construction and practice of the animal products processing course were carried out through four aspects： the improvement of teachers' ideological and political ability， the flexible use of various teaching methods， the construction of a systematic curriculum system and the innovation of curriculum assessment methods. Strive to organically combine morality and cultivation of people， to cultivate newcomers of the era who have ideals and beliefs， and professional ethics.

1 前言

習近平总书记指出：“高校立身之本在于立德树人主题”[1]。我国的高校是党领导下的高校，要为党培育德智体美劳全面发展的社会主义事业建设者和接班人、培养担当民族复兴大任的时代新人，引导学生牢固树立“四个意识”、坚定“四个自信”、坚决做到“两个维护”，帮助学生树立正确的世界观、人生观和价值观。但是长期以来，高校教师在专业课教学中重“教”轻“育”现象普遍，出现了专业教育和思政教育分离的局面，加之大部分大学生对思政课存在认知偏见[2]，使得单纯依靠思政课无法实现学生良好品格、品行、品位的塑造[3]。2020年5月，教育部印发的《高等学校课程思政建设指导纲要》指出：必须抓好课程思政建设，解决好专业教育和思政教育“两张皮”问题[4]，并明确了理工科专业课程“课程思政”建设方向，这为当前做好专业课程思政建设提供了方向指引。……
