摘要 课程改革建设是教学改革的基础，也是重点。以动物性食品检验真实岗位工作过程为依托，以岗位所需完成的工作任务为主导，从课程内容设计、一体化课程教学模式的构建、课程考核方式等方面进行了教学改革与实践。实践表明，基于工作过程的动物性食品卫生检验课程教学改革，符合现代职业教育发展新要求，教学模式更加科学、合理，教学内容切合工作实际，学生的学习劲头更大，提高了课程教学质量，对高职畜牧兽医专业人才培养，动物性食品卫生检验课程建设提供了较好的参考模式。

Abstract Curriculum reform and construction is the foundation and focus of teaching reform. Based on the actual working process of animal food inspection， dominated by the tasks that need to be completed by the post， the teaching reform and practice were carried out from the aspects such as the course content design， the construction of an integrated curriculum teaching model， and the curriculum assessment methods. The practice showed that the teaching reform of animal food hygiene inspection course based on the working process could meet the new requirements of the development of modern vocational education. The teaching mode was more scientific and reasonable. The teaching contents were in line with the actual work. This teaching reform stimulated the enthusiasm of students to learn and improved the course teaching quality.The research provided a good reference model for the training of animal husbandry and veterinary professionals in higher vocational colleges and the construction of animal food hygiene inspection course.

动物性食品衛生检验作为畜牧兽医专业的技能核心课程，主要学习肉、蛋、乳等动物性产品及其副产品的生产、加工、销售、食用中的质量卫生检验标准知识，掌握畜禽及其产品检验检疫技术方法，解决生产实际问题，以保障动物性食品卫生质量[1]。若要防止人畜共患病对人体健康造成危害，必须确保动物性食品安全，随着人们对肉用食品质量标准期望的加强和动物性产品质量检验体系的不断完备，实时对课程教学内容进行改革尤为重要。目前，课程教学存在一些问题：如教师讲授理论学时多，实践教学偏少，实验实训与生产工作实际脱节，大部分学生对教师讲授的内容没有兴趣，且课程考核评价单一，课程教学效果受到影响[2]。采取何种教学模式才能获得最好的教学效果成为该门课程教学过程中的难题。……
