摘 要：基层食品抽检工作一直是食品卫生检验中的一个重要且关键的环节，随着我国经济的快速发展，人们的生活水平逐步提升，对食品安全关注度也有所提高，为保证食品安全，做好抽检管理工作至关重要。本文分析了食品抽检工作存在的问题，并提出相应对策，以促进基层食品抽检工作有效开展。

Analysis of Problems and Countermeasures of Grass-roots Food Sampling Inspection in China

Abstract： Grass roots food sampling inspection has always been an important and key link in food hygiene inspection. With the rapid development of China’s economy， people’s living standards have been gradually improved， and their attention to food safety has also been improved. In order to ensure food safety， it is very important to do a good job in sampling management. This paper analyzes the problems existing in food sampling inspection， and puts forward corresponding countermeasures to promote the effective development of grass-roots food sampling inspection.

1 食品进行抽样检测的重要性

食品抽样检测能截断食品的细菌传染路径。对食物进行抽样检验，可以更有效地找到易形成致病菌的食品种类。存在食品安全隐患的食物一旦流入市场，会对消费者的健康造成影响。严重时，甚至会导致传播传染病，不利于社会稳定发展。通过采取抽样检验，可以最大限度地降低问题食物流入市场的几率，使人们的食品卫生水平得到有效保障，从而降低出现健康问题的风险潜在可能性。此外，抽样检验还可以指导食品生产者实行自律，使之强化对生产的品质管理，从根源斩断食品被污染的渠道，达到良性的经营目标。抽样检验能保护市场消费者的利益，通过抽样检验可以保证市场消费者购买到安全、可信的食品，从而实现保障人们利益的目标。抽样检验可以间接加强食品质量，食品抽样检验可以提高人们对食品安全的认识，使其倾向于挑选信用良好、产品质量有保证的厂家，采用这种方法，可以提升市场内部竞争率，使市场循环更加良性化，给制造商带来创新力量。……
