摘 要：动物源性食品安全问题时有发生，给消费者造成了一定的经济损失和身体危害。分析动物源性安全问题的发生原因，并采取相应的防范措施和对策，对保障食品安全具有重要意义。本文主要介绍了动物源性食品的安全问题，提出了解决动物源性食品安全问题的对策，为动物源性食品安全的管控提供借鉴，以减少动物源性食品安全问题的发生。

Analysis on the Problems and Countermeasures of Animal-derived Food Safety

Abstract： Animal-derived food safety problems occur from time to time， causing certain economic losses and physical harm to consumers. It is of great significance to analyze the causes of animal-derived safety problems and take corresponding preventive measures and countermeasures to ensure food safety. Therefore， this paper mainly introduces the safety problems of animal-derived food， and propose the countermeasures to solve the problem of animal-derived food safety， so as to provide reference for the prevention and control of animal-derived food safety and reduce the occurrence of animal-derived food safety problems.

动物源性食品主要指可供人们食用的动物及其产品，如肉、蛋制品、奶制品等。而动物源性食品安全问题主要指食用动物源性相关食品后引起的外在威胁与对健康存在危害的因素。近年来，动物源性食品安全问题层出不穷，给消费者的身心健康带来了较大的威胁[1]。因此，分析动物源性食品安全问题及对策具有重要意义。本文主要阐述动物源性食品安全问题发生的原因，并提出相关解决动物源性食品安全问题的对策，以供参考。

1 动物源性食品的安全问题

1.1 饲料质量不达标

饲料与动物的健康成长有着直接的联系，而饲料从生产到喂养动物前如果某个环节出现疏漏，会直接影响动物的健康成长，从而间接影响人体健康[2]。例如，在生产饲料时违规使用添加剂，或饲料在保存期间受潮而发生霉变，致使饲料质量下降，或饲料生产企业未按照国家标准生产，或养殖人员使用劣质饲料喂养动物等，都极易引发动物发生病害，消费者购买食用后易引起动物源性食品安全问题，使身体健康受到损害[3]。……
