摘 要：食品安全和人民群众的身体健康与社会安定关系密切，强化食品检验检测，稳步提升食品安全保障能力和水平，具有非常重要的现实意义。食品检测实验室是开展食品检验检测的主要场所，检测人员应采取科学的方法进行食品检验检测，向有关单位和社会公布检测检验结果。文章重点探讨了食品实验室检验检测管理中存在的主要问题，进而提出了强化食品实验室质量控制、提升检验检测能力的有效措施。

Abstract：Food safety has close relations with peoples health and social stability. Strengthening food inspection and testing and the ability to guarantee food safety has a very important practical significance. Food testing laboratories are the major institutions to perform inspection and testing. Detecting personnel use scientific methods to perform inspection and testing， and announce the testing results to relevant units and the society. This thesis focus on the main issues in food laboratory inspection and testing management， and then puts forward effective measures to strengthen food laboratory quality control and improve inspection and testing capabilities.

食品安全事關广大人民群众的生命财产安全，食品检验检测部门在食品安全水平的提升中，发挥了关键性作用。要想做好食品仲裁检验、产品质量检测等公证性检验活动，必须提升检验科研人员的专业能力和实验室的检验检测设施仪器水品。

1 食品检测检验机构管理中的主要问题

1.1 设备的检修与维护

很多实验室未能定期维护、检修相关的检验检测仪器，一般都是设备出现问题后再维护和检修。若光学仪器的维护检修工作做得不到位，势必会影响它们的检测精度和使用寿命，检测结果不能准确表现食品的具体情况。一些仪器设施很少使用，或检测业务量小，但如果未定期保养维护，会影响其零部件的正常性能，还可能增加维护成本和维修费用[1]。

1.2 检测人员缺乏专业能力

实验室通常情况下是直接聘用高学历人才，其没有在基层岗位锻炼，不熟悉设备的问题时有发生;而且未能深入而持续的培训原有的工作人员，导致检测人员没有及时学习检验检测理论知识。……
