摘 要：近年来我国各类食品安全问题层出不穷。人们对国内食品行业的信任度急剧下降，严重限制了食品行业的发展。本文分析了食品安全领域现状及食品安全检测中存在的问题，并提出了食品检验检测质量控制措施，以提升食品安全检测水平，保障人们的身体健康。

Problems and Control Measures in Food Safety Testing

Abstract： In recent years， food safety problems have occurred from time to time， and people’s trust in the food industry has decreased sharply， which has seriously limited the development of the food industry. This paper analyzes the current situation in the field of food safety and the problems existing in food safety detection， and puts forward the quality control measures of food inspection and detection， so as to improve the level of food safety detection and ensure people’s health.

随着人们生活水平的提高，人们对食品安全问题越来越重视，食品安全的严峻形势也引起了相关部门的高度重视。目前，我国食品安全检测中仍存在一些问题，如管理制度不完善、检测标准体系不完备等，因此要强化食品检验检测细节控制、提升食品安全检测关键技术水平，以保证食品安全，推动社会经济发展。

1 食品安全领域现状

1.1 违规使用食品添加剂与非法添加物

目前，食品市场领域的竞争越来越激烈，为争取更多的用户群体和改善食物的口感，很多食物厂家都会在食物中加入各类食品添加剂。但食物添加剂均有相应的使用限制，超量或超范围使用，会带来严重的食物安全隐患。例如，超临界二氧化碳通常作为发酵的辅助剂，若过度使用会影响心肺功能。因此，必须对食品添加剂在食品生产过程中的使用进行严格控制。此外，除了合法的食品添加剂外，近年来有不法制造商通过添加三聚氰胺、苏丹红等各种非法添加物改善食品的色、香、味，这些非法添加物严重危害了人们的身体健康，需对其进行严格的控制和管理[1]。……
