摘 要：职业院校着力培养技术技能人才，实验实训能力与水平直接影响人才培养质量。本文从食品检验检测实验实训质量安全保障体系的构建、实践应用成效等方面进行了系统的阐述分析，并展示了从6个不同维度构建食品检验检测实验实训质量安全保障体系的建设成果，为人才培养质量的提升提供了新的视角和借鉴方法。

Construction and Practice of Quality and Safety Guarantee System for Food Inspection and Testing Experiment Training

——Taking the School of Quality and Technology Supervision of Sichuan Province as an Example

Abstract： Vocational colleges focus on training technical talents， and the ability and level of experimental training directly affect the quality of talent training. This paper systematically expounds and analyzes the construction and practical application results of the quality and safety assurance system of food inspection and testing experiment training， and shows the construction results of the quality and safety assurance system of food inspection and testing experiment training from six different dimensions， which provides a new perspective and reference method for improving the quality of talent training.

1 問题的提出

现行《中华人民共和国食品安全法》正式实施于2015年10月1日。这部“史上最严食品安全法”针对人们关心的食品等问题进行了详细的规范，有最严谨的标准、最严格的监管、最严格的处罚和最严肃问责的要求[1]。对于职业教育机构来说，食品检验检测不仅是一种职业技能，也是一种实验实训教学[2]。作为职业技术，主要体现在提供食品检测技术保障、准确的技术依据、公正的检测结果以及出具科学、准确、可靠的检测报告[3]。对职业院校而言，食品检验检测是一种专业，甚至是一种专业核心技术技能[4]。

2018年，四川省质量技术监督学校创建四川省中等职业学校“示范专业”产品质量监督检验专业过程中，把构建食品检验检测实验实训质量安全保障体系作为重点项目进行研究。经过3年的建设和运行，学校的食品检验检测实验实训质量安全保障体系得到了完善，同时获得了专家认可，认为构建的六大保障对于食品检验检测实验实训机构具有一定的借鉴和参考作用。……
