摘 要：食品是维持人们身体正常运行不可或缺的重要物质之一，但在食品加工过程中，因为诸多因素的影响，粉尘、气溶胶等形态的污染物质潜入到食品中，易造成食品重金属超标问题。为了确保社会食品安全，需借助科学、合理的方式，快速、及时地对食品重金属情况进行检测，保障食品安全。本文针对食品重金属超标检测意义以及食品重金属污染原因进行详细分析，其目的是探究出食品重金属污染物质与危害以及食品安全背景下食品重金属超标检测方法。

Discussion on the Detection of Excessive Heavy Metals in Food under the Background of Food Safety

Abstract： Food is one of the indispensable and important substances to maintain the normal operation of peoples bodies. However， in the process of food processing， due to the influence of many factors， pollutants in the form of dust and aerosol sneak into the food， which may easily lead to the problem of excessive heavy metals in food. . In order to ensure social food safety， it is necessary to use scientific and reasonable methods to quickly and timely detect heavy metals in food to ensure food safety. In this paper， the significance of the detection of heavy metals in food and the causes of heavy metal pollution in food are analyzed in detail.

随着人们生活水平的不断提高，人们对于食品安全的重视程度不断提升。近年来，一些不法商家为了自身经济效益最大化，不顾广大消费者的健康、安全，使质量不合格的食品暴露在人们视野中，如染色米、三聚氰胺、瘦肉精及地沟油等食品安全问题，造成社会恐慌，不仅危害了人们的安全、健康，而且对社会稳定、和谐发展带来了一定程度的影响。随着我国工业的快速发展，重金属污染问题日渐严重，如何避免食品重金属超标成为当前食品安全管理中的重要内容。食品中常见的重金属元素有铜、汞、铬、锡等，若食品中的重金属超标，则会对人们的身体健康带来严重损害。因此，高质量的食品检测是确保食品安全的最主要方式，能够避免人们购买含有重金属的食品，杜绝广大消费者出现重金属中毒问题。
