摘  要：食品营养学进展是食品科学与工程专业研究生的一门核心专业课。随着研究生教育深化改革以及食品专业理论技术的快速发展，传统的食品营养学进展课程教学已不能满足当代的教学要求，对该课程进行教学改革是大势所趋。文章通过分析食品营养学进展课程教学存在的问题，从教学内容、教学模式、教研结合、考核评价等方面进行改革探索，从而提升教学质量，拓宽研究生的学术视野，以期为地方院校食品专业研究生的课程建设提供参考借鉴。

Abstract： Food Nutrition Progress is one of the core curriculum for graduate students specialized in food science and engineering. With the deepening reform of graduate education and rapid development of food industry， the traditional teaching model of Food Nutrition Progress couldn't be able to meet the requirements for contemporary teaching， and the teaching reform has been an inexorable trend. By analyzing the main problems existing in teaching of Food Nutrition Progress， a series of reform explorations， including teaching content， teaching model， combination of teaching and scientific research， teaching assessment， are proposed in this paper， which aims at improving the quality of teaching and expanding the academic views of graduate students. This teaching reform could also be considered as a reference for other courses of graduate students majoring in food in local colleges.

前言

在當今“互联网+”的新形势下各种膳食营养误区在媒体平台大肆传播，食品安全问题层出不穷，食品营养与健康已成为人们日常生活中的焦点。我国国民营养健康水平随着生活质量的提高而显著改善，但是与营养相关的慢性疾病患病率仍在增加，食品营养与健康、精准营养等领域已逐渐上升至国家战略层面。2016年中共中央政治局审议通过“健康中国2030”规划纲要，明确提出要把握营养健康发展规律，建立健全健康教育体系，推动全民营养健康深度融合。如何“吃得营养、吃得安全”已成为全社会最为关注并亟须解决的重要问题。

食品营养学进展是学校食品科学与工程省级一级学科硕士点的核心学位课，也是普及科学食品营养知识、提高膳食健康水平的重要平台。……
