摘 要：荞麦作为湖南省特色旱粮，具有食用、饲用、药用多种用途。发展荞麦产业，对促进湖南省经济增长具有重要作用。该文阐述了湖南省荞麦产业的现状及发展优势，对品种、种植方式、产值、科研投入等方面存在的问题进行了分析，并提出了加快新品种选育、加大科研投入力度、加强金荞麦的推广开发力度、加强一二三产业的有效融合等具体措施。

Abstract： Buckwheat， as one of the characteristic dry crops in Hunan， is used for food， feed and medicine. Developing buckwheat industry plays an important role in promoting the economic growth in Hunan Province. In this study， the development advantages and current situations of buckwheat industry in Hunan Province were discussed， and the existing problems such as varieties， planting methods， output value and scientific research investment， were analyzed. And some countermeasures were proposed， such as speeding up the breeding of new varieties， increasing scientific research investment， strengthening the promotion and development of Fagopyrum cymosum （ Trev. ） Meisn， and strengthening the effective integration of the primary， secondary and tertiary industries and so on.

蕎麦属于蓼科（Polygonaceae）荞麦属（Fagopyrum）一年生或多年生草本植物[1]。荞麦属有3个栽培种：苦荞麦[Fagopyrum tataricum （L.） Gaertn]、普通荞麦（Fagopyrum esculentum Moench）和金荞麦[Fagopyrum cymosum （Trev.） Meisn][2]。荞麦起源于中国，由于其具有生长迅速、生育期短、适应性强和功能性成分丰富等优点，以及它在作物布局、营养互补、粮食构成等方面的作用[5-6]，因此成为我国很多地区的重要粮食作物之一[7-9]。荞麦在湖南的栽培历史悠久，直到20世纪70～80年代荞麦仍是湖南省很多山区的主要辅助粮食，通常作为丘陵地区和山区耕作换茬的作物进行种植。荞麦产业的发展，对完善湖南省粮食生产结构，促进粮食生产的可持续发展，丰富膳食，提升生活品质，推动经济增长具有重要作用。本项目组在湖南省开展荞麦产业发展情况调研，查阅历年记载荞麦生产情况的资料，收集各县荞麦产业生产、加工、品牌建设等信息，并深入凤凰县、沅陵县、安化县等地进行实地调研，考察荞麦生产基地、荞麦加工车间及产品等，与当地合作社代表、技术员及农业部门有关人员进行座谈，旨在全面掌握湖南省荞麦产业发展现状，深入分析当前存在的问题，研究提出可行的发展对策，推动湖南省荞麦产业快速发展。……
