摘 要：随着我国市场经济及食品生产加工产业的迅猛发展，新技术作为食品生产加工质量检测的重要手段，其重要性不言而喻。通过近年来研究发现，新技术在运用过程中的规范性与方法性对食品微生物检测、食品安全与风险消除的影响很大。本文对新技术在食品微生物检验检测中的应用进行分析研究，为下一步工作的开展提供参考依据。

Abstract：With the rapid development of market economy and food production and processing industry in China， new technology as an important means of food production and processing quality detection， its importance is self-evident. In recent years， it has been found that the scientific and methodological nature of “new technology” has a great impact on food microbial detection， food safety and risk elimination. This paper analyzed and studied the application of new technology in food microbial testing， providing reference for the next work.

目前，新技术在我国食品微生物检测中极为重要，对食品安全、食品健康具有较大的保障意义。然而，我国对于新技术在食品微生物检验检测中的应用研究相对较少，基于此，需采取有效措施对其进行分析研究。本文从PCR检测技术应用分析、生理生化技术应用分析和免疫学检测技术等方面对新技术在食品微生物检验检测中的应用进行分析，对食品中微生物检测工作的发展有重要的理论意义。

1 我国食品面临的主要安全问题

随着我国市场经济建设的迅速发展，人们的生活水平不断提升，人们对食品的营养功效与安全问题越发关注。据相关数据资料显示，历年来我国都有因食品安全问题造成的重大事件，甚至是死亡事故的出现。如何加强食品安全检测已成为诸多专家学者共同研究的议题之一。食品安全的有效保障不是简单的流程，需从时代发展角度出发，对因人为操作、环境污染及微生物污染等造成的食物性中毒进行科学检测及防范，减少对身体的危害。……
