摘 要 动物性食品微生物检验是动植物检验与检疫专业的一门必修课，实践性很强，而实验课在整个课程体系中占有十分重要的位置。本文结合作者近十年来承担实验课教学的实践体会，从实验材料选择、如何设置致病菌的生化特性鉴别实验项目、合理安排时间保证综合性实验的有效开展以及将实验教学内容与本科生研究性学习相结合等四个方面进行了系统性总结，这些经验的集成为今后进一步改进实验教学方法、提高实验课教学质量、增强本专业学生解决实际问题的能力奠定了坚实基础。

Abstract The experimental course plays a vital role in the curriculum system of microbiological examination on animal derived food for students majoring in quarantine and inspection for plants and animals. In this paper， we make a summary and puts forward the viewpoints on the experimental teaching from four aspects， including choice of experimental materials， settings of experimental items about biological characterization， rational time plan for implementing comprehensive experiments， and combination of experimental contents with research-oriented teaching. Acquisition of these experiences will lay a solid foundation for improving teaching methods and raising the ability of solving the practical problems for students.

动物性食品微生物检验是我院动植物检验与检疫专业的一门必修课，动物医学及相关专业学生可以选修这门课程。动物性食品微生物检验是一门实践性很强的专业课，虽然分配课时不算多，理论课仅有24个学时，实验课为32个学时，但课程内容涉及到多个相关课程或者说与这些课程内容有交叉，包括环境微生物学、食品微生物学以及医学微生物学的相关内容。通过该门课程的学习，学生能够掌握食品的微生物检验方法以及应对突发性食物中毒事件的处置及检验流程。

动物性食品微生物检验实验教学在该门课程中占有重要位置。实验教学作为课堂教学的延续和不可分割的组成部分，一方面促进学生对书本理论知识的理解，增强感性认识，提高操作技能；……
