摘 要：益生菌制剂作为一种无毒、无副作用的新型保健品，在人体中发挥着重要的作用，直接关系着人体的机能和生命健康。然而，我国益生菌产业起步较晚，技术尚不成熟，且缺乏健全完善的标准，市场监控不到位，使得益生菌的产品质量问题受到广泛关注。本文以益生菌的筛选评价指标（即菌株的选择标准、有效性评价和安全性评价）及产品质量控制为出发点，对益生菌產品生产现状、存在的问题和对策进行了探讨。

Abstract：As a new type of health care product without toxicity and side effects， probiotics preparation play an important role in human body and are directly related to human function and life health. However， the probiotics industry started late in China， the immature technology， the lack of perfect standards， and the lack of market monitoring， the quality of probiotics has received widespread attention. In this paper， starting from the screening evaluation index of probiotics and product quality control， the production status， existing problems and countermeasures of probiotics products were discussed.

近年来，随着微生态理论研究成果在实践中的不断应用，益生菌得到了迅速发展。在我国，益生菌除了部分用于医药产品外，大部分都用于保健食品。益生菌作为维持人体生命活动和身体机能的有益物质，不仅对人类健康发挥着重要的作用，也有效保证了人体生命体征的稳定运行，同时作为一类生物活性制品，需保证益生菌菌株的稳定、有效、安全。

世界卫生组织对益生菌的定义为：一类在摄入适当数量后会对宿主机体产生益处的活体微生物。近年来，市场对益生菌的需求量日益增加，人们对其质量标准问题的关注度也日益提升，但我国还没有明确规定相应的评价指标和评价方法。大部分企业在研发益生菌产品时，不对菌种进行全面的安全性评价，且不同国家研究人员采用不同的评价指标和评价方法。目前，益生菌产业处于发展阶段，不仅种类多，而且难以管理。……
