摘要：为探索水筛式旋转摇青机加工闽南乌龙茶最优做青工艺参数，以本山品种茶树为材料，研究水筛式旋转摇青与传统滚筒摇青对闽南乌龙茶品质的影响。结果显示，水筛式旋转摇青机6次摇青工艺加工的本山乌龙茶在感官得分和生化成分含量上均优于传统闽南滚筒式摇青机加工的本山乌龙茶。研究表明用水筛式旋转摇青机加工本山乌龙茶，有助于提高闽南乌龙茶（本山）品质，提升产品市场竞争力。

Abstract： Inorder to explore the suitable green-making processparameters fortheprocessing ofMinnan Oolong tea by the water-sieverotating shaking machine，this study tooktheOolong tea varietyBenshanas the materialand investigated the effects of water sieving rotary shaking and traditional drum shaking on the quality of Minnan Oolong tea.The experimental results showed that the Benshan Oolong tea made by the water sieve rotary shaking machine with 6 shaking processes had better sensory scores and biochemical components than the Benshan Oolong tea made bythe traditional Minnan drum shaking machine.Itis illustrated that the application of the water-sieve type rotary tea-shaking machine in the processing field of Benshan Oolong tea is helpful to improve the qualityof Minnan Oolong tea （Benshan）and

enhance itsmarket competitiveness.

福建乌龙茶品类多样、各具特色，其中本山茶凭借其独特的风味与品质[，具有重要的市场地位。本山茶原产于县西坪镇尧阳村，由当地月寨人王圆醒发现。本山茶为无性系品种，与铁观音有着“近亲”关系，其品质上乘，甚至不逊于铁观音，且其植物抗逆性、生长势等均强于铁观音2。本山茶属于通过国家审定的乌龙茶优良品种，是县六大当家良种之一，易栽培管理，制成的闽南乌龙茶品质优良，深受消费者喜爱。

做青工序是闽南乌龙茶制作的核心环节，对茶叶品质起着决定性作用[3]。做青过程中，茶叶细胞组织因摩擦受损，促使茶叶内含物质发生一系列转化与累积，从而形成乌龙茶独特的香气、滋味，而做青效果会受到环境温度、气流等多种因素的影响[4。其中，摇青是做青工序的重要环节，目前常用的摇青机械是滚筒摇青机，其做青效果良好，但因需要人工上下叶，劳动强度较大，需进一步改进。……
