【摘要】近半年来，新冠疫情在全球大范围爆发，对世界的经济社会发展造成了极大的危害，对各国公共卫生制度产生了巨大的冲击，更对公共卫生学专业的本科人才培养提出了新的考验。营养与食品卫生学作为预防医学的一门核心课程，疫情的发展给教学工作带来了新的挑战。最近更多海鲜食品外包装新冠病毒的检出，更是对营养与食品卫生学本科教学的实用性提出了新的要求。部队作为人口高度密集的群体，合理的营养、安全的食品对部队非常关键。在当前疫情防控常态化的局势下，如何保证部队饮食安全是一名预防医学专业本科生的基本技能。本文将从在疫情常态化下，如何做到食品安全的角度，探讨营养与食品卫生学的课程结构、教学内容、危机意识培养等多个方面可进行的改革。

【Abstract】In the past six months， Corona Virus Disease 2019（COVID-19） Epidemic has erupted on global scale， which has caused great harm to the economic and social development of the world. It also has a huge impact on the public health system of various countries， which proposed new test of the cultivation of undergraduate talents in public health. COVID-19 has brought new challenges to military nutrition and food hygiene teaching which is a core course in military preventive medicine. Recently， the detection of coronavirus in the outer packaging of seafood has put forward new requirements for the practicality of the undergraduate teaching of nutrition and food hygiene. Reasonable nutrition and safe food are crucial to the army which is a highly densely populated group. In the current situation of epidemic prevention and control， how to ensure the safety of the army？蒺s diet is a basic skill of a military preventive medicine undergraduate. This article discusses the reforms that can be carried out in many aspects of the military nutrition and food hygiene course structure， teaching content， and crisis awareness training from the perspective of food safety under the normalization of the epidemic situation.

2020年，新型冠状病毒肺炎开始在全球爆发流行，目前全球已有超过1亿人确认感染新型冠状病毒（数据截止于北京时间2021年1月27日15：00）。在这短短半年里，新冠病毒对世界各国社会政治、经济、教育发展都带来了巨大的冲击。中国也在这场没有硝烟的战争中受到了前所未有的考验，并且凭借着2003年“非典”疫情以来的防控经验和重大突发公共卫生事件应对的有效措施，在这次疫情防控的工作中做出了表率作用，为世界各国进行新冠病毒防控工作提供了重要经验。……
