摘 要：食品添加剂能改善食品的品质和色香味，还可以用于食品的保鲜、防腐，以此提高食品生产的经济效益。国家对食品添加剂的适用范围和最大用量作出了严格的规定，但是部分商贩为追求更多的经济利益，过量使用食品添加剂、使用非法添加剂、滥用农药兽药对食品安全造成了巨大的危害。近年来随着检测分析技术迅速发展，越来越多的分析技术被应用于食品安全检测中，将荧光、量子点、纳米技术、免疫学技术等现代化技术应用于食品安全检测中，研发可随身携带的试条纸、试剂盒及相应的便携式检测设备是未来食品安全检测领域发展的方向。

Abstract： Food additives can improve the quality and color and fragrance of food， but also can also be used for food preservation， corrosion preservation， so as to improve the economic benefits of food production.The state has made strict provisions on the application scope and maximum dosage of food additives， but in order to pursue more economic interests， some excessive use of food additives， illegal additives and abuse of pesticides and veterinary drugs have caused great harm to food safety.In recent years， with the rapid development of detection and analysis technology， more and more analysis technology is applied to food safety detection， fluorescence， quantum dots， nanotechnology， immunology technology and other modern technology applied to food safety detection， research and development can carry strip paper， kits and the corresponding portable detection equipment is the future direction of the field of food safety detection.

我国在食品添加剂的使用上有严格的规定，但我国食品添加剂由于起步较晚，在生产和使用上依然与部分欧美国家有不小的差距。在食品添加剂的生产中某些关键技术依然未突破，有关部门对食品添加剂的监管也存在漏洞，一些非法添加剂可以在市场中很轻易的买到，因此，相关部门要努力规范食品添加剂生产、审查和使用。

1 非法使用添加剂对食品安全的危害

1.1 非法添加剂

非法添加剂是指国家明令禁止用于食品中的物质，这类物质一般具有强致癌、强致畸性，危害十分巨大。国家要求对这类添加剂进行严格的检测，但为了谋取利益，仍有不法商贩铤而走险。

1.1.1 苏丹红

苏丹红的结构决定了其具有强致癌性，长期食用添加苏丹红的食物，会对肝、肾造成不可逆的损害，这种毒性可以通过遗传作用传递给下一代，它的代谢产物也具有致癌性。……
