摘要“食品加工过程安全分析与优化”课程中蕴含丰富的食育内容。德、智、体、美、劳五育的融合需要以“食育”作为突破口，即有利于学生掌握理论知识及技能培养，又有利于价值观的塑造。文章阐述了课程定位，剖析课程内容中“德育”“智育”“体育”“美育”“劳育”在“食育”中的关系，并通过多样化的教学手段实现“食育”与“五育”的融合，实现全方位育人的培养目标。同时，也为开展“食育”通识课程提供参考和借鉴。

The Integration of Eating Education and Five Education

——The Teaching Research of Food Safety Analysis and Optimization in Food Processing

AbstractThe eating education in the content of Food Safety Analysis and Optimization in Food Processing is rich. The integration of moral education， intellectual education， physical education， aesthetic education and labor education should take eating education as the breakthrough point， which is not only conducive to students to master theoretical knowledge and skill training， but also conducive to the shaping of values. This paper expounded the curriculum orientation， analyzed the relationship among moral education， intellectual education， physical education， aesthetic education， labor education and eating education in the curriculum content， and realized the integration of eating education and five education through diversified teaching means， achieved the training goal of all-round education. At the same time， it also provides reference for the general education course of "eating education".

立德樹人是当代教育的根本任务，立德树人并非只注重德育，而是以培养德、智、体、美、劳全面发展的社会主义接班人为主要教育目标。[1， 2]在教学过程中，五育的融合需要合适的载体。食育即饮食教育，最早在日本兴起，其目的在于促进农民与消费者交流及传统饮食文化的传承；欧美国家也逐渐将食育融入教育体系，旨在培养健康生活的技能及价值观；如英国开展“校园菜园计划”，通过种植、加工、烹饪使培养学生选择食物的能力和珍惜粮食的品质；美国则通过“可食性校园计划”传达健康饮食的价值观给学生。[3， 4]中国历史上有关于饮食礼仪及养生的食育理念，但并未形成教育体系。[5]2006年，李里特教授提出食育包含生命与营养科学知识，培养良好的饮食习惯，人与自然环境和谐共存及饮食文化的传承弘扬。[6]可见食育即是饮食文化的传承、营养及安全知识，也是能力培养的过程，不仅有智育，且蕴含了德育、劳育、体育、美育。……
