摘 要：自改革开放以来，我国社会经济发展迅速，人们的物质生活水平日益提高，在饮食上的要求也越来越高，餐饮行业得以快速发展。但是，在新时代，要想不断给人们带来更好的美食和更好的服务，就需要培养优秀的烹饪专业人才，因此，授课教师要努力提高烹饪专业的教学质量，及时更新烹饪专业教学理念与方法，紧跟时代发展的步伐。本文是笔者根据自身多年教学经验，针对提高高职烹饪专业教学质量这一课题，提出自己的意见，如有不足之处，还望指正。

Abstract：Since the reform and opening up， Chinas social and economic development has been rapid， peoples material living standards have been improving day by day， and the dietary requirements have become higher and higher. The catering industry has developed rapidly. However， in the new era， in order to continuously bring better food and better service to people， we need to cultivate excellent culinary professionals. Therefore， teachers should strive to improve the teaching quality of the culinary profession， update the teaching concepts and methods of the culinary profession in a timely manner， and keep up with the pace of development of the times. This article was based on my years of teaching experience， aimed at improving the teaching quality of cooking major in higher vocational colleges， and put forward my own opinions. If there are any deficiencies， I hope to correct them.

随着社会经济的高速发展，餐饮企业对高职烹饪专业学生提出了更好的要求，为了适应形势的发展，培养高素质人才，需要对烹饪专业的教学进行系统的研究和探讨，特别是专业技能课的教学缺乏科学的、规范的、行之有效的教学方法，更需要研究其对策，采用多种教学方法提高烹饪专业教学质量。

1 做好理论课教学，奠定学习基础

学习任何一项技能，都是从理论知识开始，烹饪专业也不例外，任何时候都不能放松对学生的理论教学。要想做好理论课教学，必须从以下几点入手：①提

高教师的业务能力。学生是学习的主体，但是老师是教学的关键。教师的教学水平会影响教学效率，因此，要优化教师结构，培养骨干教师，鼓励教师定期到事/企业单位实习进修，学习最新的技术，提高自己的业务能力与综合素质。……
