摘要以林下有机三七叶为原料，采用单因素实验将三七叶发酵提取液、柠檬汁提取物、金银花汁提取物、果糖、柠檬酸配制成气泡水饮料，之后使用响应面优化方法对工艺进行优化。结果表明，最佳饮料配方为三七叶发酵提取液0.5 g、柠檬汁提取物35 g、金银花汁提取物40 g、果糖73 g、柠檬酸0.01 g。在该条件下制成的三七叶气泡水饮料色泽明亮，口感爽口，感官评价得分可达86.11分，且质量指标符合国家标准，是一款健康、营养的创新型饮料。本研究为三七叶的利用奠定了一定基础。

Development of Sparkling Water Beverage Containing Extract of Panax notoginseng Leaves

Abstract  Leaves  of Panax notoginseng under the  forest were  fermented  and  extracted. The  fermented leaf extract， the extract of lemon juice， extract of honeysuckle juice， fructose and citric acid were mixedto prepare  a  sparkling water  in  a  single  factor  experiment，  and  then  the preparation was  optimized by using the response surface method. The results showed that the best beverage formula is 0.5 g fermented leaf extract of P. notoginseng， 35 g lemon juice extract， 40 g honeysuckle juice extract， 73 g fructose and 0.01 g citric acid. With this formula the prepared sparkling water containing extract of fermented leaves of P. notoginseng under the forest is bright in color and refreshing in taste. The sensory evaluation score is as higher as 86.11， and the quality index meets the national standard. This beverage is an innovative， healthy and nutritional beverage.

三七（ Panax notoginseng）是我國最早的药食同源植物之一。三七全株均可入药，除三七根外，叶和花也有较高的药用和食用价值[1]。三七叶味辛性温，有软化血管、止血、活血化瘀、延缓衰老、调节血糖血脂、促进细胞新陈代谢、提高脑功能增加记忆力、保护肝脏以及治疗贫血的功效[2-5]。由于三七同为人参属植物，且其有效活性成分多于人参，因此又被现代中药药物学家称为“参中之王”。

目前三七的种植产地主要为中国云南文山和广西靖西地区，二者产量占全国三七总产量的90%以上[3]。三七不仅是传统的重要中药材，而且是可再生的适用于工业化生产的特色生物资源[4]。三七的主要活性成分是 Rb1、R1、Rd等皂苷，经过发酵、生物转化使得三七中这些含量相对较高的皂苷糖基定向转化为稀有人参皂苷或苷元，从而改变其生物活性和生理作用，增加三七叶的商业价值[5-6]。……
