摘要：茉莉花茶是中国具有悠久产销历史的再加工茶类。文章剖析了中国茉莉花茶产销概况，指出了茉莉花茶产业发展的瓶颈，提出了茉莉花茶加工技术创新与产品创新路径，展望了茉莉花茶产业发展前景，阐述了茉莉花茶的健康属性与消费空间。笔者认为，依托创新驱动，茉莉花茶产业将具有较大的发展潜力和市场消费空间。

Overview and Innovative Development of

Jasmine Tea Industry

Abstract： Jasmine tea is a kind of reprocessed tea with a long history of production and marketing in China. This paper analyzes the general situation of the production and marketing of jasmine tea in China， points out the bottleneck of the  development of jasmine tea industry， puts forward the path of processing technology innovation and product innovation of jasmine tea， forecasts the development prospect of the industry of jasmine tea， and expounds the health property and consumption space of jasmine tea. The author believes that the jasmine tea industry will have great development  potential and market consumption space relying on innovation drive.

花茶在中国具有相当悠久的产销历史，且在茶产业中的相对体量较大，茉莉花茶在花茶品类中占比最大。但是，自上世纪90年代中后期以来，在相当长的一段时间内花茶产业都没有大的发展和突破。花茶主要是以绿茶为原料再加工形成的特色品类，既是中国绿茶消费延伸的重要领域，也是中国茶在国际茶叶市场中能够形成特色的主要茶类。因此，深入研究花茶的产销概况及创新发展路径，将为花茶产业寻求突破带来新的发展机遇。

一、中国茉莉花茶产销概况

1. 茉莉花生产现状

2019年，中国茉莉花种植面积稳中略增，为1.29万hm2，较上年增长3.8%。在茉莉花四大主产区中，广西横县种植面积7 533 hm2，占58.4%;四川犍为3 400 hm2，占26.36%;福建福州1 666 hm2，占12.92%;云南元江300 hm2，占2.33%。全国茉莉花产量持续增长，2019年，茉莉花总产量12.8万t，较上年增长6.1%。其中，横县茉莉花产量9.6万t，占全国总产量的四分之三;犍为1.4万t，占10.9%;福州1.1万t，占8.6%;元江0.7万t，占5.5%。

2. 茉莉花茶产销现状

茉莉花茶主要以烘青绿茶为原料窨制而成。2019年，中国茉莉花茶产量约11.36万t（表1），占全国茶叶总产量的4.06%，高于黄茶和白茶产量之和，约为红茶产量的二分之一。……
