摘 要：食品检验检测实验室管理及服务能力决定了食品检验检测结果的科学性和权威性。本文介绍了食品检验检测的概念，对食品检验检测实验室管理及服务能力存在的问题进行了分析，并针对问题给出了对策，以期为各大高校食品检验检测实验室管理及服务能力的提升提供借鉴。

Research on the Improvement of Management and Service Ability of Food Inspection and Testing Laboratory

Abstract： The management and service ability of food inspection and testing laboratory determines the scientificity and authority of food inspection and testing results. This paper introduces the concept of food inspection and testing， analyzes the problems existing in the management and service ability of food inspection and testing laboratories， and gives countermeasures for the problems， hoping to provide reference for the improvement of the management and service ability of food inspection and testing laboratories in Colleges and universities.

为了确保餐桌上的食品安全，让人们吃上健康安全的食物，做好食品检验检测工作是重要环节。随着食品检验检测相关课题和项目的增多，高校实验室中食品检验检测方面的实验任务也越来越多，对应的管理难度也随之增加，需要高校实验室管理者提高重视程度，及时发现食品检验过程中存在的问题并加以分析，针对存在的问题给出措施，不断地提升管理及服务能力。

1 食品检验检测的相关概念及现状

1.1 食品检验检测的定义

食品检验检测指的是各个食品检验机构针对不同食品当中的营养成分以及各种添加剂进行检验，并与国家规定的相关标准进行对比分析得出结果。在食品检测检验的过程中，相关部门以及机构应该严格按照食品检验检测的流程以及标准进行，不论数据分析用于科研，亦或是面向社会进行公示都应该确保数据的真实性。

1.2 食品检验检测实验室管理现状

食品检验检测实验室的管理质量决定了食品检验检测的质量及效率，决定着从事食品检验检测工作人员的工作流程以及食品检验检测实验室管理规章制度是否科学合理，能否真实发挥检测效果。……
