摘 要：该文通过分析食品科学与工程专业实践教学现状和存在问题，结合重庆文理学院应用型人才培养定位，从以下6个方面重新构建了食品类专业实践教育体系：实验内容项目化，实验平台开放化，实践基地企业化，实验教师双师化，教学理念工程化，考核方式现场化。通过这6个方面的改革，在食品专业应用型人才培养方面并取得了较好的效果，为其他院校相关专业培养应用型人才提供一定的借鉴。

Construction and Exploration of Practice-teaching System in Food Specialty Based on Application-oriented Personnel Training

Abstract：The food professional practice education system was built through the analysis of food science and engineering practice teaching status and existing problems， combining with the applied talents cultivation orientation of Chongqing University of Arts and Sciences. Through the six aspects of the reform such as： project experiment content， experiment platform open， enterprise as practice base， the experiment teachers double， engineering ideas of teaching and examination mode field， we specialized in food cultivation of applied talents and good results have been achieved. It can provide some reference for the training of applied talents in other colleges and universities.

“实践教育，是指围绕教育教学活动目的而开展的、学生亲身体验的实践活动”，是实现人才培养目标的重要一环。科学合理的实践教学体系不仅在于向学生传授实验知识、验证理论、培养实践技能，更重要的是体现理论和实践的结合，引导学生掌握科学的思维方式，提高分析问题和解决问题的能力，培养学生创新精神和实践能力[1]。应用型本科以培养适应生产、建设、管理、服务一线的高技术应用型人才为主要目标。应用型本科高校有着本科教育的特点，但又不同于“学术性、理論型”本科人才培养模式，更注重实践性和应用性。我国应用型本科院校大都建校时间不长，随着高等教育由“精英教育”向“大众化教育”的转变应运而生[2]。如何准确定位本科应用型人才培养目标，确定合理的知识、能力、素质结构，构建与之相适应的人才培养体系，特别是实践教学体系，是学校人才培养模式改革的重要任务。……
