摘 要 应用型本科培养促进产业转型升级发展的实用人才。重讲授而轻实践的课堂教学模式和重结果而轻过程的试卷考核方式亟需改革。教学要突出实践实训，进行深度的产学结合。考核要重点考查学生的技术革新能力和理念创新意识。这是应用型本科课程教学与考核改革的维度，“饮食文化”课程教学与考核改革也要以此为维度，变知识讲授为饮食产业文化塑造，变试卷考核为过程性实践考核。

Analysis of the Teaching and Examination Reform of

Applied Undergraduate Course

——Take the course of “dietary culture” as an example

Abstract Practical undergraduate training to promote industrial transformation and upgrading of the development of practical talents. The classroom teaching model of heavy teaching and light practice， and the examination methods that result in heavy and light process are badly in need of reform. Teaching should give prominence to practice training and combine deep real estate education. Assessment should focus on students' technological innovation ability and concept innovation consciousness. This is the teaching and examination reform of applied undergraduate curriculum dimensions， "teaching and examination reform course" food culture should also take this as a dimension， knowledge teaching building as the food industry culture， change process of paper examinations into practice examination.

自龔震伟在《应用型本科应重视创造性培养》中首次提出应用型本科教育至今，已有近二十年了。这个期间，从概念的提出经历了探索发展和模仿国外发展模式的阶段。2010年代初期，国家提出大力发展应用型本科，为其作了较为明确的定位。围绕应用型本科开展的教育改革研究中约40%的研究的是课程改革。以往，由于教育类型定位不明确，培养目标含糊不清，课程改革也处于举棋不定的困境中。如今，教育部明确要求应用型本科要加强实践教学，加强与产业的融合，服务地方产业转型升级发展，为课程教学与考核改革指明了较为确定的维度。作为烹饪专业和食品专业的专业理论课“饮食文化”，也要依照这个维度进行教学和考核改革。

1 理论指导下的实践性教学

无论是哪一层次的高等教育，学生都是通过专业课程学习，形成专业对应的职业必备能力和素养。……
