摘 要：为提高蔬菜食用的安全性，了解六盘水本地蔬菜农药残留情况，该研究利用农药残留速测仪对六盘水市内3家超市（超市1、超市2、超市3）的5类共12种蔬菜进行了农药残留检测，以期为有效控制有机磷、氨基甲酸酯等农药残留超标问题提供理论参考。

Detection and Analysis of Pesticide Residues of Vegetables in Liupanshui Supermarkets

Abstract： In order to improve the safety of vegetable consumption， we studied the status quo of pesticide residues of local vegetables in Liupanshui. This study used pesticide residue speed measurement instrument method to conduct pesticide residue detection on a total of 12 kinds of vegetables in five types of supermarkets in Liupanshui （supermarket 1， supermarket 2， supermarket 3）. Thus it could provide references to control the organophosphate and carbamate pesticide residues.

近年来，随着社会的进步和发展，市场对蔬菜的需求迅速增长，对质量的要求也在不断提高。但是蔬菜种植难免会出现病虫害等问题，为了提高蔬菜产量，在农业生产过程中农药的使用不断增加，如此大量使用农药，蔬菜中农药残留也随之大幅度提升，农药残留超标问题已成为威胁食品安全的因素之一[1]。

农药残留会通过食物链直接或间接地对人类的生命健康造成危害，轻者会出现头晕、恶心等症状，严重时会出现呼吸麻痹，损害人畜内脏机能，甚至死亡[2]。一些农药残留还会致癌、致畸等，甚至影响遗传及生殖力。现阶段，很多中毒死亡事件是因为食用了含有高浓度的农药残留农产品所导致的[3-4]。鉴于农药残留的危害较大，需严格检测进入市场蔬菜的农药残留问题[5]。

目前，我国蔬菜农药残留检测结果并不理想，虽然蔬菜农药残留检出率未呈上升趋势，但仍存在残留超标问题，就连有机蔬菜和绿色蔬菜中也被检测出农药残留。刘娟等[6]对我国果蔬农药残留研究现状了分析，结果表明：2011—2017年我国农药残留呈逐年下降趋势，说明我国农药残留正不断减少，果蔬质量不断提高。……
