高等学校的教学改革，改到深处是课程的改革，而高等教育的专业课程教学质量保障对于高等人才的培养至关重要。学习质量保障体系（Assurance of Learning，AOL）是一种非常有效的检验教师教学质量和学生学习成效的检测体系，目标是评估课程开设和教学实践结果是否符合人才发展目标的要求，宗旨是通过学生学习效果的评估说明人才培养质量最终是否达到其所设定的目标，并运用评估数据制定教与学的改进方案。本文以食品质量与安全专业的核心基础课程《食品品质学》为例，基于AOL体系设置四大教学目标及其子目标，并使目标与教学内容、教学方法、考查类型相匹配，建立相应的课程评判标准与改进策略，使教学相长，保证教学水平与学习效果的共同进步和良性发展，培养专业能力与职业道德兼备的高素质食品专业人才。

The Teaching Reform Path of Based on Assurance of Learning （AOL）

The teaching reform in colleges and universities is the curriculum reform， and the teaching quality guarantee of specialized courses in higher education is very important to the cultivation of higher talents. Assurance of Learning （AOL） is a very effective testing system for teachers' teaching quality and students' learning effectiveness. Its goal is to evaluate whether the curriculum offering and teaching practice results meet the requirements of talent development goals.  The objective is to explain whether the quality of talent cultivation finally achieves its set goal through the evaluation of students' learning effect， and to formulate the improvement plan of teaching and learning by using the evaluation data. In this study， we set the food quality and safety professional core courses as an example to establish the AOL system. Four major teaching goal and the sub-goal is organized. Then the goal， the teaching content and teaching method are linked. The examination type matching， and its corresponding curriculum standards and the improvement strategy are then established， to make the teaching and learning improving together.  It can ensure the teaching level and learning effect develop and cultivate high-quality food professionals with both professional ability and professional ethics.
