摘 要：在《食品营养与卫生》课程教学中，采用任务导向教学方法，应注意精心设计任务，以学生为中心，教师引导，学生通过制作PPT或微课完成任务。任务导向教学法的应用可提高教师的综合能力，强化学生的主体意识，培养学生的学习兴趣，有利于学生对食品营养与卫生相关知识的理解和掌握，提高了学生分析问题与解决问题的能力。

Application of Task-oriented Teaching Method in the Teaching of Food Nutrition and Hygiene

Abstract：In the“Food Nutrition and Hygiene” course，the task-oriented teaching method was used，teachers should pay attention to design tasks carefully，maked student centered，teacher guided，students maked ppt or micro-course to complete the task. Application of task-oriented teaching method improved the quality of teachers，to strengthen the students subject consciousness，to cultivate the students interest in study，but also could help students understand and master knowledge of Food Nutrition and Hygiene，enhance the ability of the student to analyze the question and use knowledge to solve the problem.

传统的灌输式教学方法，偏重于教师的教，而忽视了学生主动性、积极性和创造性的培养，教师按照教材的内容和顺序逐节讲授，教师讲解，学生照单抓药，不利于学生个性和能力的发展。食品营养与卫生是食品科学与工程的专业课程，课程内容与学生的生活紧密相关，针对这一特点，笔者在近几年的食品营养与卫生的教学中尝试采用任务导向教学法。任务导向教学法是基于构建主义理论的一种教学模式[1]，强调以“任务为主线、教师引导、学生为中心”，以具体的任务为学习动力或动机，以完成任务的过程为学习的过程，旨在把学习者融入有意义的任务完成的过程之中，让学习者积极进行探究与发现，自主地进行知识的整合与构建，以展示任务成果的方式体现教学成就的教学活动。相对于传统教学法，更有利于大学生综合能力包括适应能力、分析决策能力、人际交往能力、团队协作能力、竞争能力、组织管理能力和时效能力等个体综合能力的培养[2]。……
