摘要：近10年来，新式茶饮以其“好喝”的口味、创意的营销、时尚的饮用方式获得了年轻消费者的喜爱。通过市场调研，综述了新式茶饮的起源与发展、茶叶原料的演变和创新、茶原料加工技术的创新发展和现状。分析和讨论了新式茶饮未来发展趋势，以及其对传统茶叶行业的启示。

Abstract： In the past ten years， novel-tea beverage have gained the favor of young consumers with their delicious

taste， creative marketing and fashionable drinking methods. Through market research， this paper summarized the origin

and the evolution of the novel-tea beverage， the innovation and current situation of the novel-tea beverage technology

and tea raw materials.The future development trend of novel-tea beverage and its enlightenment to traditional tea

industry were analyzed and discussed.

新式茶飲是继传统冲泡饮茶和瓶装茶饮料之后一种革命性的新饮茶方式，以其时尚、口味新颖和多样化，受到了年轻一代消费者的喜爱。新式茶饮业是2010年左右异军突起的新兴服务行业，特别是自2012年开始，行业发展速度更为迅猛，成为餐饮行业中乘风破浪的新消费趋势。涌现了诸如喜茶、奈雪の茶、蜜雪冰城、CoCo都可等十多个品牌，每个品牌的年销售额都达到了几十亿元以上。预计2021年中国新式茶饮销售额将突破1 100亿元，茶饮门店将突破50万家。

一、创新的新式茶饮品

新式茶饮品的创意起源应该是来自于美国的“冰茶”和“英式奶茶”。英国和美国的烹饪书记载，至少从19世纪早期开始，茶水就已经被加入冰块后冷却饮用了。当时采用的是绿茶，大量加入烈酒，调配成含酒精的“冷绿茶潘趣酒”（Cold green tea punches），这种饮品当时被广泛推广饮用，还以英国摄政王乔治四世（George IV）的名字命名为“摄政王潘趣酒（Regent's punch）”。1879年，一本名为《老弗吉尼亚的管家》的社区食谱记载了美国最古老的甜冰茶配方，作者是马里恩·卡贝尔·泰瑞。他在书中详细描述了冰茶的制作过程：用热水烫茶壶后，加入1夸脱开水和2茶匙绿茶。……
