【摘要】 食管癌普遍被认为是一种起病隐匿，病情进展较快，预后程度较差的疾病。如何提高食管癌早期防控能力，改善患者预后状况一直是医疗卫生人员研究重点。营养是生物体进行生命活动所必需摄入的食物成分，在人体物质能量的代谢与转换、细胞增殖分化、免疫系统的构建以及抑制组织癌变等方面具有重要作用。该文针对营养因素在食管癌发生发展中的作用，在营养摄入水平、维生素、化学及微量元素等方面展开综述。

[Abstract] Esophageal cancer is generally considered to be a disease with hidden onset， rapid progression， and a poor prognosis. How to improve the ability of early esophageal cancer prevention and improve the prognosis of patients has always been the research focus of medical and health personnel. Nutrition is an indispensable food component that organisms must take in for life activities. It plays an important role in the metabolism and conversion of human body energy， cell proliferation and differentiation， the construction of the immune system， and the inhibition of tissue canceration. This article reviews the role of nutritional factors in the development of esophageal cancer and reviews nutritional intake levels， vitamins， chemicals and trace elements.

食管癌（esophageal cancer，EC）是癌癥死亡的常见原因，全世界范围内每年新发食管癌患者57.2万人，同时约有50.9万人死于食管癌[1-2]。而我国又是世界上食管癌发病率、死亡率较高的国家之一，2014年全国癌症普查显示，食管癌发病率为18.85/10万，高居恶性肿瘤发病率的第五位，死亡率约为14.11/10万，居恶性肿瘤死亡率第四位[3]。由于起病隐匿，患者在出现症状时大多已处于癌症中晚期，治疗效果较差，5年生存率更是低于20%[4]。近年来，随着科学技术的进步和大量临床、流行病学研究的开展，越来越多研究成果证实一些营养因素在食管癌的发生发展中具有重要作用，施行一定的措施进行营养干预和有害因素防治对于提高疾病防控能力、改善患者预后尤为重要。

1 营养摄入水平

居民摄入营养水平与文化、经济、饮食等多方面相关。国内外大量研究证实，居民文化程度低、经济状况差可增加罹患食管癌的风险。……
