摘要：对出产于甘肃省张家川回族自治县9个产地的乌龙头的营养成分和有益矿质元素进行检测分析。结果表明，乌龙头叶及芽中蛋白质、可溶性糖、粗脂肪、氨基酸、总皂苷、粗多糖的平均含量分别为39.8、5.6、4.6、17.9、1.6、3.4 g/kg;锌、铁、钙、硒、硼元素的平均含量分别为5.46、43.3、745、0.015、1.24 mg/kg，具有高营养，低糖分，高钙、铁，低硒的特点，其中皂苷和多糖成分的存在更使得乌龙头成为理想的保健食材。

Nutritional Components Analysis of Characteristic Crop Aralia chinensis L. in Zhangjiachuan of Gansu Province

Abstract：The nutritional components and beneficial mineral elements of 9 Aralia chinensis L. samples from Zhangjiachuan County were detected and analyzed. The results showed that the average contents of protein，soluble sugar， crude fat， amino acid， total saponins and crude polysaccharide in the leaves and buds of Aralia chinensis L. were 39.8 g/kg， 5.6 g/kg， 4.6 g/kg， 17.9 g/kg， 1.6 g/kg， 3.4 g/kg， respectively. And the average contents of zinc，iron，calcium， selenium and boron were 5.46 mg/kg， 43.3 mg/kg， 745 mg/kg， 0.015 mg/kg， 1.24 mg/kg，respectively. It has the characteristics of high nutrition， low sugar， high calcium， iron and low selenium， and the existence of saponins and polysaccharides makes it an ideal health care food.

烏龙头学名楤木（Aralia chinensis L.），为五加科楤木属的多年生落叶灌木或小乔木，又名次龙爪、袍木芽、刺龙芽、木龙头等[1 - 3 ]，广泛分布于我国的甘肃中南部、青海孟达、陕西、四川、云南以及辽宁等地。乌龙头的嫩芽可食用，美味可口，富含蛋白质、维生素、微量元素和人体需要的多种氨基酸;乌龙头根茎可供药用，具有补气、活血、止痛、祛风、利湿、利尿、消肿之功效，因此也被誉为“山野菜之王”[4 - 6 ]。目前，对张家川县乌龙头的研究主要集中在栽培技术和开发利用前景上，对其营养成分和有益矿质元素的研究鲜有报道。我们通过对张家川县乌龙头进行营养成分测定分析和评价，为深入了解乌龙头的营养价值，保护和开发当地乌龙头资源提供参考。

1   材料与方法

1.1   供试材料

供试乌龙头样品采自甘肃省天水市张家川回族自治县刘堡乡窑儿村、马鹿乡宝坪村等9个典型乌龙头种植区，每个样品包括叶及芽、茎、根3部分，具体采样点信息见表1。……
