糖醋小排是老少皆宜的一道菜。虽然很多地方都把它做成冷菜,其实真正本帮的上海菜里糖醋小排是热菜。吃起来酸酸甜甜,要是再撒一点白芝麻上去就更香,一口不过瘾!

烤麸是一种面制品,咸中带甜,而四喜指的就是烤麸、香菇、木耳、花生米。这道菜属于一吃就停不下来的,老上海人就爱用它来下酒。

Baked bran is a kind of flour products, salty with sweet, and four xi refers to baked bran, mushrooms, fungus, peanuts. The old Shanghainese love to eat it when they drink.

八宝辣酱

八宝辣酱就是早前上海人家里做的“炒辣醬”改良而来的,现在做法可以加入虾仁、鸡肉、鸭肫、猪腿肉、肚子、开洋、香菇、笋片等8种食材。把它加到面里做浇头也超级美味。

Babao chili sauce was adapted from“stir-fried chili sauce” made in Shanghainese homes. Now, eight ingredients can be added, including shrimp, chicken, duck gizzard, chilled pork, pork tripe, cayenne, mushroom and bamboo shoot slices. It’s also super delicious when you add it to noodles as a topping.

上海的生煎包,又叫“生煎馒头”,是上海的传统小吃。生煎用料扎实、皮薄馅大、底部焦脆、里面的馅料鲜嫩多汁。食客用筷子挑破薄如纸的外皮,里面便是多汁的鲜肉,汤汁丰盈,可以倒出满满的一汤匙,吸完汤汁在吃生煎,唇齿留香!

Shanghai’s fried buns, also known as sheng jian mantou, is a traditional snack in Shanghai. It has a crispy bottom and comes full of tasty broth inside. Diners pierce the paper-thin skin with chopsticks, and pour out a full tablespoon of the soup, and then eat the fried buns. It’s delicious!

粢饭团

Zi fan tuan

粢饭团被誉为“上海早点四大金刚”之一,有咸甜两种口味。是用糯米饭,包裹上卤蛋或是咸蛋、加上肉松、火腿肠或者秘制的肉酱,但是无论怎么搭配,都少不了的要加一根油条进去,再挤一些沙拉酱提味。血糯米的香糯、卤蛋的Q弹、油条的酥脆、肉松的咸甜、肉酱的香气,每一口都是实打实的馅料。

Zi fan tuan is known as one of the “Four Heavenly Kings of Shanghai breakfast”, with salty and sweet flavors. Zi fan tuan is made of warm steamed sticky rice. Shanghainese like putting sugar and youtiao inside steamed sticky rice. People also put salty duck egg yolk, rousong (crushed dried pork) or other stuffings in zi fan tuan.

阳春面

Plain noodles

阳春面分为红汤和白汤两种,正宗的上海阳春面是白汤。这道菜的名字很有情调但实际上却是相当简单的一种面条,一把雪白的光面配上一撮碧绿的小葱,讲究的人家还会用三种骨头(鸡骨、猪骨和黄鳝骨头)熬制,最后再加入一筷子猪油,温润的猪油在汤水里慢慢悠悠地融化,是儿时的味道。

The name of the dish is very emotional appeal but is actually quite simple kind of noodles, somebody uses three bones (chicken bones, pork bones and eel bone) stewing, finally, adds a little lard, lard in soup to melt slowly, that is the taste of childhood.

大排一直是很受上海人欢迎的浇头之一,把带膘大排腌制后煎至两面金黄,再加入葱段、酱油和糖等调料煮至收汁,一口咬下去,厚厚的大排里锁住的肉汁溢出来配上葱段的焦香味,让人欲罢不能。

Pork chop have always been one of the most popular toppings for Shanghainese. They are marinated and fried until golden brown on both sides, then cooked with scallions, soy sauce, sugar and other spices until the sauce is reduced. When you bite into them, the gravy in the pork chop will overflow with the burnt flavor of scallions, which makes people addictive.

上海炸猪排是上海西餐的前身,位于南京西路的上海德国菜餐厅——德大西菜社在最先推出了一道炸猪排。随后在80年代,上海红房子西餐厅又推出了海派炸猪排和罗宋汤的搭配。当时上海的年轻人接触了很多西方饮食和文化,这才逐渐地揭开了西餐的神秘面纱,流传至今,经久不衰。但是现在无需去高档的西餐厅,这道菜在任何小吃店、上海人的餐桌上,都会经常出现。酥脆的外壳,牢牢锁住猪排的肉汁,搭配上海辣酱油,就是经典的老味道。

店铺分为两层,店铺最里面和二楼是画展,只需购买一杯饮品即可参观。磕茶看展,喝下午茶的同时还能细细品味店内的画作。店内饮品的选择较多,主推六大爆款:寒天黑龙奶茶、柠檬薄荷苏打、芝芝桃桃、杨枝甘露、抹茶拿铁、寒天草莓多多。

历经百次调研只为满足不同人的口味,撚雀创造,一杯好茶,千百次试炼。

The shop is mainly in rich light green color. The interior decoration of the shop is very retro, showing the cultural characteristics of Hong Kong, Guangdong and Macao everywhere. Large and small retro TV, green wooden spiral staircase, giant astronaut installation, landmark road signs and so on, with Hong Kong style retro clothing, it makes you feel like you’re in Hong Kong.

The shop is divided into two floors, the innermost and second floor of the shop are the exhibition, which meets to buy a drink to visit. You can also enjoy the paintings in the shop while having afternoon tea.

Bu Ting Zhai—a taste of Shanghai

馄饨是浙江一带的民间传统面食。步亭斋的馄饨是根据老上海的传统制法,采用猪油、鸡汁和小葱作为汤底,搪瓷小砂锅作为容器,小火慢熬而成,充满了上海本地的传统特色。馄饨皮是用高筋面粉传统工艺压制,再切成8cm乘8cm的正方形。馅料则以肥、瘦猪肉、鲜虾仁及蔬菜调味混成,馄饨皮包裹着剁碎的馅料,硕大紧实的馄饨令远近食客络绎不绝慕名而来。

作为少有的隐藏在时尚中心的上海小吃店,步亭斋的砂锅馄饨价格适中,味道鲜美。别看面积不大,但总是门庭若市,店内外均设座位,但周末的时候还是免不了一位难求的场面。除馄饨外,步亭斋的招牌鲜肉小笼也是一绝。不仅卖相好看,吃起来也一点不输上海老字号。小笼包皮薄,汤汁充沛,肉馅鲜嫩,唯一要注意的就是,千万不要因为贪吃就想一口吃掉,一不留神汤汁就会溅到衣服上。好吃的背后更多的是匠心,步亭斋有着开放式的厨房,顾客可以看到所有的馄饨都是现包现下的,让人吃的舒心且安心。

Wonton is a traditional cooked wheaten food in Jiangnan area. The wontons at Bu Ting Zhai are based on the traditional recipe of old Shanghai, with lard, chicken bouillon and scallion as a soup base and a small enamel casserole pot cooked over a slow fire, full of local characteristics. Wonton wrappers are made of bread flour and cut into 8cm by 8cm squares, stuffed with a mixture of fat and lean pork, fresh shrimp, vegetable and spices, attracting gourmets from far and near.

Bu Ting Zhai is a shanghai snack bar in Shanghai Fashion Center, its casserole wontons are affordable and delicious. Although the shop area is not large, but always full of people. In addition to wontons, Bu Ting Zhai’s signature steamed dumplings with fresh meat (Xiaolongbao) are also unique. Not only does it look good, but it also has the taste of Shanghai timehonored brands. Xiaolongbao has a thin skin, rich soup, fresh meat, the only thing to pay attention to is that you don’t want to eat it in one bite, a careless soup will splash on the clothes. Bu Ting Zhai has an open kitchen, diners can see all the wontons are freshly made, making people feel comfortable and reassuring to eat.

质馆在M50的店铺不大。尽管如此,店铺外张贴着创始人——来自台湾的广告教父郑松茂先生的漫画形象还是非常醒目。店铺玻璃窗上写着一行字:“质馆相信 真的有人在乎咖啡的品质”。

质馆的团队用SCA(Specialty Coffee Association)的标准选豆、烘焙、冲煮。周周自烘,还原精品豆自带的独特风味。选用美国CQI打分80+的单一庄园精品咖啡豆,从甜、醇、苦、风味、樱桃果酸5个维度描述味觉感知。品一杯拿铁,一口醇香里没有回味的苦涩。在安静的角落里读书、写字,这样一个片刻最合心意。

The cafe in M50 is small. Even so, the cartoon image of the founder, the godfather of advertising from Taiwan, Zheng Songmao, stands out. “Because great coffee doesn’t just happen” reads a message on the window.

The team uses SCA (Specialty Coffee Association) standards to select, roast and brew beans, restoring the unique flavor of fine beans. They choose American CQI score 80+ single farm boutique coffee beans to describe the taste perception from five dimensions of sweet, mellow, bitter, flavor and cherry fruit acid. Sipping a latte and reading or writing in a quiet corner is the perfect moment.

因为《何以笙箫默》等影视剧曾经在这家咖啡馆取景,所以吸引了不少人前来打卡。店铺风格确实让人感到温暖舒适,原木色的家具和装潢、棕色皮质沙发、复古的吊扇、暖色调灯光,店堂宽敞明亮,氛围雅致。

这家店最早成立于2002年夏天,在2005年10月来到M50开业。从开业以来,一直将咖啡馆定位为园区的公共接待厅、公共客厅,为园区内外客人提供交流会晤、休憩的场所。得益于这里良好的氛围,所以成为了各类聚会活动的理想场所,包括影视作品分享会、企业年会、中外青年交流会、文化交流分享沙龙、绘画体验兴趣课程等等。

Because movies and TV shows such as “Silent Separation/My Sunshine” have been filmed in the cafe, it has attracted many people to tick off. The cafe is warm and cozy, with wood-colored furniture and decor, brown leather sofas, vintage ceiling fans and warm lighting.

The cafe first opened in the summer of 2002 and came to M50 in October 2005. Xiaochunhe—nothing but love

“晓”意为拂晓、“春”意为春天、“和”意为家和,一个颇具中国风的名字,晓春和的创立源于创始人对咖啡的执着与热爱。位于PimMala旁的晓春和,虽然占地面积不大,却有着家的温馨。创始人希望可以用咖啡和甜点把家的感觉,带给全国各地的家人们。以家人之名,创建的国民咖啡品牌。

坐在原木椅子上隔着窗户看向吧台,咖啡师驾轻就熟的做着一杯又一杯精美的咖啡,咖啡豆的香气和舒芙蕾甜甜糯糯的香气让午后的客人精神涣散,恍惚之间一个下午的时光就悄然而逝。
