摘要：以山东省城镇居民甘薯消费的问卷调查数据为基础，分析了山东省城镇居民甘薯消费行为的基本特征，探讨了影响城镇居民甘薯消费的主要因素，并基于此构建了甘薯需求函数模型，测定城镇居民甘薯需求的收入弹性。结果表明：城镇居民年龄、个人月收入、甘薯价格、购买便利程度、甘薯营养价值认知以及商家宣传手段是影响城镇居民甘薯消费的主要因素，城镇居民甘薯需求的收入弹性为0.236，说明甘薯在城镇居民消费中已经摆脱传统劣等品的商品属性，以正常品属性存在。

Abstract Based on the questionnair survey data， the basic characteristics and the main aftecting factors of sweet potato consumption behavior of urban residents in Shandong Province were analyzed in this paper. A demand function model of sweet potato was constructed to measure the income elasticity of demand for sweet potato in urban residents. The study found that the age of urban residents， personal monthly income， price of sweet potato， ease of purchase， recognition of nutritional value of sweet potato， and propaganda means of merchants were the main factors affecting the consumption of sweet potato in urban residents. The income elasticity of demand for sweet potato in urban residents was 0.236. This survey showed that in the consumption of urban residents， sweet potato has been a normal product while not being an inferior product.

随着人民生活水平的不断提高和膳食营养结构的改变，城镇居民的粮食消费结构不再局限于“精米精面”的单一消费，更多倾向于“粗细搭配”的消费理念，营养型、保健型食品越来越受到城镇居民的关注。甘薯凭借其丰富的营养成分以及独特的保健抗癌功效，在近几年的世界卫生组织关于健康食品排行榜中荣居首位，并被营养学家当作一种药食兼用的食品。本文利用调研获取的微观数据，对城镇居民甘薯消费意愿及影响因素进行实证分析，从而达到促进甘薯产销协调发展的目的。

当前从经济学角度对甘薯的研究主要集中于以下三个视角。一是价值：甘薯含有丰富的营养价值并具备独特的经济价值。从营养价值方面看，甘薯含有的营养物质十分丰富[1]，但是，不同肉色甘薯块茎的主要营养品质不同[2]。……
