切分沙窝青萝卜二氧化氯溶液预冷工艺优化研究

摘 要:采用二氧化氯溶液对切分沙窝青萝卜进行预冷,并以溶液浓度、温度和处理时间为试验因素,通过测定色泽、渗出物含量和叶绿素含量,对预冷工艺进行正交优化。综合分析得出最优处理组合为:采用10 ℃ 85 mg·L 二氧化氯预冷液浸泡5 min。

Study on Optimal Precooling Process of Fresh-cut ‘shawo Green Turnips by Using Chlorine Dioxide Solution

Abstract: The low temperature chlorine dioxide solution was used to precool fresh-cut ‘shawo green turnips. Factors including the concentration of the solution, the temperature of the solution and the precooling time were studied in order to get the optimum precooling process through means of orthogonal experiment. The whiteness index, the content of exudate and the content of chlorophyll were used to compare the precooling effect in the study. The optimum precooling process were: 85 mg·L chlorine dioxide solution, precooling for 5 min, the temperature of chlorine dioxide solution was 10 ℃.

切分果蔬是目前蔬菜加工产品中新兴的一种方便产品,但切分果蔬在加工过程中由于切分造成组织损伤,引发一系列不利于贮藏的生理生化反应,如呼吸代谢加快、乙烯产生加速、酶促和非酶促褐变加剧、易被微生物污染等,尤其是微生物超标问题是切分产品出现的主要质量问题,因此在切分果蔬加工技术中消毒和杀菌是一个必不可少的工艺[1-5]。二氧化氯具有较强的杀菌消毒能力,是目前国际上公认的较为安全的食品保鲜剂,十分适用于切分即食产品的杀菌消毒[6]。
果蔬采后田间热可加速果蔬的呼吸和蒸腾作用,促进水分蒸发和微生物繁殖,并加速果蔬老化进程[7-8]。而通过预冷可以快速降低果蔬本身的呼吸热、田间热,使其降至适合保鲜的温度,可明显减少损贮藏损耗率、提高果蔬品质,延长果蔬贮藏期[9]。
本试验采用二氧化氯溶液对切分沙窝青萝卜进行预冷处理,即发挥二氧化氯的杀菌功能,同时对切分产品进行预冷,以利于切分产品货架期质量的保持,旨在提高切分沙窝青萝卜保鲜工艺技术水平。……
