摘要：金坛封缸酒承载着千百年来的历史文化，既是金坛地区历史发展的“见证者”，又是集聚地域特色、文化底蕴于一体的国家级非物质文化遗产。在当下的视觉审美时代中，依托插画这一传播媒介，能够切实推进金坛封缸酒传统酿造技艺的保护和传承。本文阐述了金坛封缸酒的酿造材料、制作工具以及传统酿造工艺流程，分析了传统酿造技艺保护和传承现状以及插画设计的必要性，基于中国传统插画配色，绘制系列酿造技艺流程图，使金坛封缸酒传统酿造技艺被大众熟知以便更好的保护和传承，可在提高商品销量的同时实现其文化价值，为金坛封缸酒以及其它传统技艺类非物质文化遗产的保护和传承提供理论和实践参考。

Abstract：Jintan bottled wine carries thousands of years of history and culture. It is not only the "witness" of the historical development of Jintan area， but also a national intangible cultural heritage with regional characteristics and cultural deposits. In the current era of visual aesthetics， relying on illustration as a communication medium can effectively promote the protection and inheritance of the traditional brewing techniques of Jintan bottled wine. This article elaborated the jintan seal cylinder wine brewing materials， production tools and traditional brewingprocess， analysis of the current situation of traditional brewing craft protection and inheritance as well as the necessity of illustration design， based on traditional Chinese illustration color， paint series brewing craft flow chart， the jintan seal cylinder wine traditional brewing craft was familiar to better protection and inheritance， It can realize its cultural value while increasing the sales of commodities， and provide theoretical and practical reference for the protection and inheritance of Jintan sealed jar wine and other intangible cultural heritage of traditional skills.

一、金壇封缸酒传统酿造技艺概述

1.金坛封缸酒酿造材料和制作工具

江苏省金坛县内茅山盘踞，山青水秀，是一个充满江南风情的鱼米之乡，有着“中国黄酒三杰”美誉的金坛封缸酒正产于此。金坛封缸酒醇稠如蜜的口感与其使用原料密切相关，原料选用当地当年盛产的“标米”，此类标糯米产于被国家永久耕地保护的金坛指前镇专属基地。此米颗粒饱满、味蕴醇香、性粘滋补，有机成分含量高，含支链淀粉多，表面乳白发亮，是唯一一种九孔出酒的标糯米，是众多糯米品种中的上好佳品，同样也是酿造美酒的上好原料，对于酿造过程酒体颜色的变化起到重要作用。……
