摘要：【目的】为生产出营养丰富、功能全面、风味独特的新型保健植物饮料。【方法】以广西生产的牛大力与绿茶为主要原料，配以蔗糖、柠檬酸，通过先分别浸提后混合调配的加工工艺，经单因素和正交试验，确定牛大力绿茶保健植物饮料的最佳配方，并通过产品加速破坏试验，推算出20℃下产品保质期。【结果】试验得出的牛大力绿茶保健植物饮料色泽浅黄、酸甜适口、质地均匀、风味独特，生产500mI装牛大力绿茶保健植物饮料的最佳成分添加量为牛大力20g、绿茶3g、蔗糖25g、柠檬酸0.7g。加速破坏试验推算出20℃下产品保质期为255天。经成本核算确定牛大力绿茶保健植物饮料出厂定价为8.00元。【结论】运用浸提后混合调配的加工工艺，经单因素和正交试验可以生产出口感独特、成本低的牛大力绿茶保健植物饮料。

study on Healthy Herbal Beverage of Millettia speciosa Champ. and Green Tea

Abstract：【0bjective】  In  order  to  produce  the  new  health  herbal  beverage  with  rich  nutrition，comprehensive functions  and unique flavor.【Method】  with  mi11e11ia speciosa champ  and  green  tea produced in Guangxi as the main raw materials，with sucrose and citric acid，through the process of soaking mixing and blending，the best formula of healthy herbal beverage of mi11e11ia speciosa champ and green tea was determined by  single factor and  orthogonal  experiment，and through the product acceleration  destructive  test，the  shelf life  of the  product  under  20℃ was  calculated.【Result】  The healthy herbal beverage of mi11e11ia speciosa champ and green tea under the experiment has follow characteristics： light yellow color，sweet and  sour taste，uniform texture  and unique flavor. The best ingredients of 500mI healthy herbal beverage  include  as  content：  20g mi11e11ia speciosa champ，3g green tea，25g sucrose and 0.7g citricacid. Accelerated destmctive test calculated the shelf life of the productaf 20℃ is 255 days.After cost accounting，the factory price of the healthy herbal beverage of mi11e11ia speciosa champ and green tea is  8.00 yuan.【Conclusion】Applying the process of soaking mixing  and   blending，the  healthy  herbal  beverage  of mi11e11ia speciosa  champ  and  green  tea  with special taste and low cost can be produced by single factor and orthogonal test.

牛大力，別名大力薯、牛古大力、山莲藕、金钟根、血藤、倒吊金钟等，为豆科崖豆藤属植物，美丽崖豆藤（皿i11e11iaspeciosaChamp.）[1.2]，是广西著名壮药，也是我国的特色南药和黎药。传统中医认为其具有补虚润肺、清热止咳、舒筋活络等功效。牛大力因兼具营养价值和药用价值，在我国广西、广东及海南等地长久以来被人们用作药食两用的产品。[3]

研究发现，牛大力含有多糖、生物碱、甾醇类、酮类和多种微量元素等成分，具有免疫调节[4.5]、提高亚健康机体造血功能[6]、抗疲劳[7.8]等作用，且对正常细胞安全无毒害。……
