【摘 要】 目的：优化白刺花中总氨基酸的最佳提取工艺。方法：采用响应面分析法，以总氨基酸提取率为评价指标，在考察单因素试验的基础上，选取乙醇浓度、加液量、提取温度和提取时间为自变量，利用Design-Expert软件分析优化出白刺花中总氨基酸的最佳提取工艺条件。结果：优化所得白刺花中总氨基酸的最佳提取工艺条件为：乙醇浓度为58%，加液量为21倍，提取温度为69℃，提取时间为131 min。结论：响应面优化所得到的最佳提取工艺准确、稳定，是提取白刺花中总氨基酸的可行方法。

Abstract：Objective Optimize the extraction technology of total amino acid from Sophora viciifolia hance.Methods Response surface models was used to optimize the extraction technology of total amino acid from Sophora viciifolia hance.The total amino acid were extracted using ultrasonic assisted ethanol extraction.On the basis of single factor， the concentration of ethanol， the amount of liquid added， the extraction temperature and the extraction time were the independentvariables.Design-Expert response surface methodology was employed for selecting the optimum extraction process by the indexes of the contents of total amino acid from Sophora viciifolia hance.Results Total amino acid from Sophora viciifolia hance of optimum extraction conditions were as follows，58% of the ethanol concentration，21 times of the amount of liquid added，extraction temperature of 69℃，extraction time 131min. Conclusion The extraction process obtained by response surface methodology was stable and reasonable，accurate and reliable. It was a feasible method to extract the total amino acid from Sophora viciifolia hance.

白刺花又名苦豆花、狼牙刺，在南方各地均有大量分布[1]，其花為汉族民间及少数民族习用，在民间有广泛的用药基础和丰富的药物资源[2]，同时也是药食两用之品[3]。白刺花有清热利咽、凉血消肿等作用，主治咽喉肿痛、便血、肺热咳嗽、痢疾、淋证、水肿、衄血、尿血等；花有清热解暑作用，用于暑热烦渴作用[4]。此外白刺花还含有大量的营养成分，如多种氨基酸等[5]。基于白刺花良好的药食两用用价值，笔者欲将野生白刺花开发成为保健速溶茶，现通过实验研究，优化出白刺花中总氨基酸的最佳提取方法，为白刺花保健速溶茶的开发提供科学依据。
