摘 要：食品质量关乎人们的生活品质和身体健康，而食品质量问题与以食品生产企业为核心的供应链风险高度相关。控制食品质量，则需要分析和评价食品供应链风险。但现有的食品供应链风险研究文献中缺乏针对以生产企业为核心的食品供应链的风险的探究。故对以食品生产企业为核心的供应链风险采用了定量分析和定性分析充分结合的方法进行了评价研究。首先，分析了以食品生产企业为核心的供应链风险影响要素，构建了风险指标体系；其次，依据所建立的风险指标体系，运用基于数据包络分析的模糊综合评价方法对供应链风险进行评价，克服了模糊综合评价的主观性弊端，使评价结果更具有客观说服力。最后，通过算例分析对供应链进行了评价。

Abstract： Food quality concerns peoples quality of life and health， and the food quality problem and food production enterprise as the core of supply chain risk highly correlated. To control of food quality， it is necessary to analyze and evaluate the risk of food supply chain. But existing research literature lack of food supply chain risk for manufacturing enterprises as the core of food supply chain risk of exploration， this paper uses the method of combining literature research and theoretical analysis of food production enterprises as the core of supply chain risk is evaluated. Firstly， this paper analyzes the food production enterprises as the core of supply chain risk factors， constructs the index system of risk； Secondly， based on the established risk index system， using fuzzy comprehensive evaluation method based on data envelopment analysis（DEA） to evaluate the system of supply chain risk， overcome the subjectivity of fuzzy comprehensive evaluation， make the data after the data envelopment analysis（DEA） is closer to food production enterprises as the core of the actual situation of supply chain operation； Finally， the risk factors in the food supply chain are evaluated through the example analysis， and enriched the relevant theories of food management.

引言

当前，食品安全成为全社会普遍关注的问题。由于食品生产技术的精湛化、新原料的产生以及食品贸易的全球化，造成食品污染现象日益严重，老问题没有完全解决，新问题又不断涌现。我国食品安全事件接连发生，从地沟油、福喜过期肉、“有毒汽水包”再到 “问题香蕉”、强生“质量门”及医疗垃圾回收等事件的发生，食品安全问题屡次碰触人们的道德底线，既严重危害了消费者的身心健康，又给社会造成很大的经济损失。……
